Amish Rhubarb Dream Bars
If you have any rhubarb growing in your yard, you need to try out this awesome dessert recipe to use some of it up. Rhubarb is a great plant that grows back each year and will even spread out if you let it. It's quite sour though when you eat it raw or even cooked, which is why it's included in dessert recipe where it's combined with a good amount of sugar to balance out the sourness. Rhubarb grows to be about two or three feet high with large stalks that look like celery stalks and large, broad leaves that are deep green. The stalks are red and green, and they are the only edible part of the plant as the leaves can be toxic when eaten. Melissa from Chin Deep got a big bag of rhubarb from a friend so as a food blogger, she's been working on using it up by making some new easy desserts to use it in. This is an Amish recipe that she found in some recipes from an estate sale she attended in Harmony, Minnesota. She even says that it's her favourite dessert recipe for rhubarb ever. The fact that it's super easy to make doesn't hurt either. We all love simple, easy desserts, especially when they're made with fresh ingredients.
This dreamy dessert includes a melt in your mouth buttery shortbread crust with a sweet and tangy topping made with the fresh rhubarb and some sugar. There are also some eggs and salt in the filling and some butter, flour and sugar for the shortbread crust. You could try to make this recipe gluten-free by making a gluten-free shortbread crust with gluten-free flour. Usually, gluten-free flour mixtures include rice flour, tapioca starch, and other types of vegetable starch flours. Often there will also be some xanthan gum included in the gluten-free flour which will act as a binder to hold everything in the recipe together. It's great that companies like Bob's Red Mill and others have come up with such great gluten-free baking mixes so any gluten sensitive people can enjoy making yummy dessert recipes that are gluten-free. You could also make this recipe a bit healthier by using a different type of sweetener than refined sugar. A great low glycemic sweetener to use in place of sugar is monk fruit sweetener or coconut sugar which actually tastes a lot like cane sugar, but it won't give you the sugar crashes that come with a drop in blood sugar brought on from the come down of a sugar high.
If you're watching your sugar intake, this might be a good dessert recipe to try out and substitute low glycemic sugar in. Otherwise, there is not a lot of sugar in it because rhubarb doesn't have a high sugar content. Eating too much of anything is never great for your health unless it's vegetables and low sugar fruits, but eating too much sugar can be very bad for your health and can lead to illnesses. It's also been shown that eating too much sugar can cause weight gain and digestive problems. Some people who crave sugar constantly will completely eliminate sugar from their diets for a while to reset their bodies and digestive systems. Then, only add in healthier sweeteners in small amounts like monk fruit sweetener, stevia, coconut sugar, maple syrup and honey. As always, everything in moderation, just because these sweeteners are healthier doesn't mean they are healthy for us. To be healthy, it's important to eat a lot of healthy foods like vegetables and fruits. Enjoy a little sweet treat once in a while just for the fun of it though.***
