6 Russet potatoes, peeled and diced into 1/4 inch pieces
1 cup celery, chopped
2 cups leeks, chopped
6 cups vegetable broth
1 small onion, diced
2 Tablespoons butter
1 Tablespoon all purpose flour
1/2 cup fresh parsley, chopped
2 Tablespoons fresh chives, chopped
1/4 cup fresh dill, chopped
1/2 cup heavy cream or cream
1 Tablespoon all purpose flour
1 teaspoon salt
Put the potatoes, celery and leeks into the soup pot with the 6 cups of water and bring to a boil. Reduce to a simmer and cook until vegetables are tender.
While the vegetables are cooking saute the onion in the butter until golden brown then sprinkle on the flour and cook until browned. Stir in to the soup, be sure to use a spatula to scrape all the butter from the frying pan into the soup pot.
Add the parsley, chives and dill to the soup. Continue to simmer.
In a measuring cup, stir the cream, flour and salt together. Spoon some of the hot liquid from soup into the cream mixture and stir together to warm it up, then add it to the pot of soup.
Bring the soup to a boil then shut off.
Tip: You can use your saved jars as take out jars for work. Just remove the lids to microwave heat the soup.
